I found it on the Real Simple website. It's a good base recipe, and then doctor it up how you want.
Spaghetti squash (I used two small squashes but I'll look up the exact amount later) 12 oz ricotta, part skim 1 egg 4 cups chopped spinach 1 clove minced garlic (fuck that noise, I used 3) salt/pepper italian seasoning up to 2 cups shredded mozzarella
combine ricotta, egg, seasonings, chopped spinach etc. Mix well, then add spaghetti squash (already cooked)
Add to 8x8 baking dish, top with moz and bake at 375 for 25-30 minutes. It is SO GOOD. For just myself eating it, I'll add less cheese on top.
Next time I'll add some extra protein in too - italian sausage, ground turkey or beef, chopped canadian bacon, etc.
