All of the leftovers were gone last night except for the turkey breast I made Friday. I'm going to throw it in with some potato soup tonight or tomorrow and then that will be all of it.
I made way too much stuffing and threw the rest away last night. I still have turkey in the fridge but it will be tossed. There's not much meat left, I made a big turkey pot pie on Sunday.
Now I can start stuffing my face with Christmas treats.
I cooked the carcass down into a broth, and used it last night to make soup, there is still another night's worth of soup. I'll use some of the leftover meat to make turkey, bacon, avocado, cheese quesadillas tonight. There is some meat in the freezer still and it will be used probably next week. I think the last piece of cake got eaten today.
We cooked the carcass on Sunday and made a broth. Tonight, I'm using the last of the meat and the broth to make lentil soup.
There's a few stray brussell sprouts and pieces of acorn squash in there. Those will probably get tossed, though I suppose I could make quesadillas with the leftover squash.
We didn't have any from Thanksgiving, but we had SIL and her family over on Sunday for a smaller, second Thanksgiving. We bought a 12 pound ham for 5 adults and one baby. We have a container in the freezer, plus one more still in the fridge. We'll have ham again tonight, and probably tomorrow night, plus ham sandwiches for H for lunch. Ungh.
