A week is a good amount of time. Are you going to have a car? If so, I'd try to make it to the peninsula and also to the mountains as well as the typical touristy stuff downtown.
It would be a long day, but you can do Portland or Vancouver in a day. It's about a 6 hour round trip drive from Seattle. The drive to canada might be a little longer, depending on the border wait times.
Downtown I like staying at The Westin, The W, The Inn at the Market (although a bit of a hike from the convention center), The Fairmont

Are you beer, cocktail or wine lovers? There is an amazing craft beer scene here and some good wineries and excellent cocktail bars.
Hotels. The red lion was just recently re-done we had a conference there recently and out of town people said it was nice. www.seattleredlionfifthavenue.com/ Pan Pacific is good a little further out of downtown but still walking distance to lots of restaurants and Seattle Center.
Restaurants: Any of Tom Douglas places Elliott's Piroshky Piroshky in the market Japonessa for sushi

I just toured this property about 2 months ago. Their sleeping room renovation still isn't done, so I wouldn't actually stay there because of the noise. The rooms that aren't redone aren't not nice (if I remember right those rooms were last redone within the past 3 years or so), it's just the noise that would bug me.
You should totally take the clipper up to Victoria, BC. So beautiful up there. You can get the clipper right there in downtown. In February they'll have awesome deals on hotel packages. You're probably looking at under $300 for transportation and lodging at a really nice hotel for 2 nights.

The meeting space is gorgeous though!
Wasn't aware the reno was still on-going. Yeah avoid places if they are under construction.
