Quick questions ... I'll use storebought hummus, and I typically buy the roasted garlic kind since I like that best. Think I can use that for these sandwiches or should I stick to plain hummus?
Also, would goat cheese be a good substitute for the feta? (Again, because goat is what I typically buy for myself, not feta.)
My other sandwich ideas are turkey and Provolone in pita pockets, and roast beef and American in tortilla wraps. I will add lettuce and tomato to both, and possibly mustard/mayo to a few. And small PB&Js since we will have some kids in attendance. Sound good, or should I make substitutions?

Roasted garlic hummus and goat cheese would go great on those!
I'd do cream cheese in the roast beef tortilla wraps instead of the American cheese or add mayo--they'll need something sticky to hold them in a pinwheel shape (mayo may not be sticky enough).
Pesto would be yummy in the turkey and provolone pita pockets, if you're open to something a bit different.
