I bought 5 lbs potatoes to make potatoes salad for a party only to find out that the hosts' cranky sister is making potato salad. What else can I do with potatoes?
at home dishes, please. I made a spring salad of spinach and strawberries in poppy seed dressing for the party last night. I am very evilly delighted that my salad was eaten up while there was a lot of potato salad left over for sister cranky pants.

I like to do twice-baked potatoes.
Bake then, scoop out the insides, mix with cheese, butter, sour cream, whatever else you usually put on your baked potatoes, stuff the filling back into the potato skins, wrap them up individually in aluminum foil, put them all into a big freezer bag and freeze them. Whenever we want baked potatoes with dinner but are maybe out of cheese or don't have enough sour cream, I just throw a couple in the oven for an hour.

I love dicing potatoes and then tossing them with olive oil, salt, and a bunch of spices (I use chili powder, garlic powder, Italian seasonings) and then roast them. They're the perfect side dish to any main dish (though I've been known to have them as my main dish).
