I was thinking of making chicken spaghetti but it's so hot outside that I think it'd be too heavy on our stomachs. So, I'm not sure. We are headed to the grocery store right now though.
I'm also making this during the week.... my brother is the pickiest person ever when it comes to Italian and says this is absolutely delicious. I was looking for something like this based on a dish we love at an Italian restaurant in Ft Lauderdale:
I wanted something simple, so I sauteed mushrooms and a bunch of veggies. The kids wanted pb&j.
Did you just sautee or use any seasoning? I have a few baggies of veggies frozen for stir frys and need to start clearing out the fridge. Both IJC and J complain if I don't add steak or chicken to stir fry. I want to find a way to spice it up but just have the veggies and rice or noodles.

We're having OMG chicken tomorrow night
tonight we grilled Chicken and steak, I made garlic mashed potatoes, roasted squash, and Texas roadhouse style rolls with cinnamon butter. And Sweet Tea. Is it obvious I am missing home? haha.
