They are really tasty on their own... cut the stem down and cut off the top. Then team in a pot or a microwave safe dish with a little water. If you do the microwave, wrap some saran wrap on the top. Then once done, when a knife can easily go in the stem -- pull off the leaves and dip in some mayo and scrape the "meat" off your tongue -- yummy!

I've also seen people dipping the leaves in melted butter and scraping the good part off. Haven't tried it myself, though. I love artichokes and have several good recipes for canned artichoke hearts, but have never bought whole ones because I feel a little overwhelmed. Kind of like whole pineapple...
Let me know what you do and whether it's good and maybe I'll try it, too!

Cut the tips Of the leaves off and the top off and boil for an hour, melt butter and lemon, dip the leaves in and scrape off the 'meat'. Then when you get to the end pull off all remaining leaves to get to the heart and eat that, SO good

When I was a kid, this was the big treat. My mom and I would steam up a couple and melt some butter. It's soooo good. And when you get to the heart, you have to take out the furry kind of stuff and then cut the heart up and eat that with butter. Soo good. The bigger outside leaves are tough but the closer you get to the center, the more tender and flavorful. My mouth is literally watering.
FYI- they take quite a while to steam, like more than 30 minutes
ETA: here is a good link that shows cooking, plus a photo of the choke and how to clean them.
