reality TV question

Ok, this may be a stupid question, but it's bugging me. Does anyone know how reality TV shows do the holiday episodes? I mean I don't imagine that the shows are filmed only a week or two in advance, so when they do a Christmas or Thanksgiving episode, do they just have them pretend it's the holiday when it isn't? Or am I wrong about how far in advance they film? For example and how this popped into my brain on duck dynasty they were showing episodes about Christmas such as putting up the tree decorations, starting right after Thanksgiving.
