My only thoughts would be to sub turkey for ham in the pinwheels. Someone who doesn't like pork probably has a thing about ham too. I'd also consider subbing the tortellini salad for a mac and cheese. It does double duty as a side or a main and is kid friendly.
Make sure you have plenty of water and I'd add an UNsweet plain iced tea.

oh good point on the double pork! I actually was going to do pulled chicken instead of the pork, my dad doesn't eat pork. Totally forgot about that

It just seems like a lot of carbs-- Is the tortellini/spinach salad a combo of both or either or? I would do the spinach salad. Maybe you could make a spinach, strawberry, poppyseed type salad to have something other than the fruit that is lighter.

I agree with going with pulled chicken. I would also add some veggie pinwheels. I love pinwheels but don't eat lunch meat, not sure if anyone in your group is the same. I just slice a variety of peppers, red onion, cucumber & tomato real thin and sprinkle it on the cream cheese, then roll.
Since you have a pasta salad, I would go with spinach salad. I think the menu is great though!
