Anyone have a Corn Chowder recipe recs

5 strips bacon; cut into 1/2 inch pieces
1 onion, diced
2 carrots peeled and chopped
2 stalks of celery chopped
2 garlic cloves, minced
1 jalapeno, seeded and finely diced
6 sprigs thyme
1/4 cup flour
1/2 tsp chipotle chile powder
1/4 teaspoon crushed red pepper flakes
6 cups veggie broth
2 cups milk
3 red potatoes, peeled and diced
kernels from 3 ears of corn
1 chk breast, cooked and shredded
Salt and pepper

1. In a large pot, cook bacon pieces over medium heat until crisp; remove to a paper towel with a slotted spoon.

2. Add the onion, carrots, celery, garlic, jalapeno and thyme to the bacon drippings and cook until the vegetables are soft; about 8 to 10 minutes.

3. Add the flour, chipotle chile poweder, crushed red pepper flakes and stir to coat well. Cook for 2 minutes, stirring.

4. Pour in the vegetable stock and bring to a boil.

5. Add the milk and the potatoes and bring to a boil for 5 minutes.

6. Cut the corn kernels to the soup.

7. Season with salt and pepper to taste and add in the cooked chicken. Simmer 10 minutes then serve.
