What are we eating this week? Nothing if I don't get my rear in gear!
I am going to make a couple of super easy dishes when Henry naps this afternoon - a ground turkey/rice/veggie casserole, and pasta with red sauce and ground beef.
Don't let my culinary prowess intimidate you all...
Wednesday - pork chops and some kind of veggie Thursday - No clue Friday - my dad is in town so we'll go out to dinner the entire weekend since he thinks eating at home is too much trouble.
Wednesday - Spaghetti with onion focaccia Thursday - Hamburgers? Hamburger Helper? Mini potpies with ground beef? Friday - Not sure, will go grocery shopping for the week.
Wednesday - salsa chicken in tortillas with rice and beans Thursday - I have leftover ham that I need to repurpose...maybe a ham and scalloped potato casserole? Friday - grilled cheese and tomato soup

We have to go shopping tonight! Yesterday I planned on getting home early from A's to get groceries but she had other plans. I have nothing up my sleeve at this point for dinner so it's going to be interesting.

I am so glad to see this post. So since I am planning on cooking dinner in every night this month as a challenge to myself and also to save money I would love some fresh ideas. But if you had freezer space you could easily freeze half and have plenty for a couple of dinners.
I went shopping today and hit a great meat sale so now I am set to cook for a while. I would love some pork chop, pork loin, pot roast and chicken recipes to add to my rotation. Bonus points for easy crock pot recipes for this working mom! There was a sale on ground turkey so I would love that recipe too Brit!
Oh man - this recipe is sooo unimpressive, guys! LOL I actually found it on pinterest. I like it because it's easy and you can just whatever is on hand.
Brown a pound of ground meat of your choice in a skillet. Prepare a cup of brown rice. When both are done, dump them in a casserole dish, add whatever frozen (or fresh of course) veggies you like (peas, corn, carrots, etc). Mix it all together with cream-of-something (I like cream of celery because it seems to be one of the healthier options) and bake at 350 for 30 mins. Oh and sometimes I top it with some shredded cheese
Better women than I make their own cream-of something, haha. I totally pinned a recipe to do so, but haven't gotten around to trying it. So Campbells Healthy Request it is

If you are on pinterest, there is a great "52uses for a rotisserie chx" article i have pinned. You could easily sub another meat in many of the dishes.
Here is what's been working for my family lately. Some weeks i switch the days around.
Mon: an entree salad. Sometimes i make sandwiches or biscuits to go along with and make it more kid friendly. This week its an asian chx salad (spinah, chx, can of mandarin oranges, can of water chestnuts, chop up snap peas,rice noodles)
Tues: a soup. This week it was leftover turkey, wild rice, cranberry and kale.
Wed: pasta
Thurs i have been trying crock pot something
Fri-- we almost always do pizza and a movie. Sometimes we make pizza, sometimes we buy it. Sometimes the kids have visits fridays and i never know what they are going to eat, so pizza works. When a visit gets cancelled, or its an "off"week (now the kids are at every other week visits) movies are low key and keeps their minds busy.
Sat--usually a "classic" i know they will eat. We probably eat tacos twice a month, lasagne, burgers, etc.
Sun- usually go to my parents for dinner
I miss some of the more adult/gourmet flavors and experimenting i used to do, and am trying to slowly introduce the kids to those (easy) flavors.
