does this need refrigeration?

I want to add a raspberry puree to my buttercream icing and I want to make sure it won't need to be refrigerated.

The puree is raspberries, sugar, water and lemon juice boiled and strained. Then corn starch added for bulk.

What kind of buttercream did you use? Most of those need to be refrigerated, anyway.

I think you should be fine as long as it's boiled! That way it doesn't ferment. I would also make sure to keep it in a cool place.

the buttercream is a variation on the wilton recipe that I've used for years without refrigeration. It's the addition of the fruit that makes me nervous.

Fruit doesn't need to be refrigerated. Butter really doesn't either. You'll be fine.

Nah, buttercreams don't really need to be refrigerated, and the fruit shouldn't make much of a difference!
