I just mix everything with lentils. No real recipes. Hummus, stewed and diced tomatoes, ricotta, black bean soup, carrots and turnip, gahh the lost goes on and on. I'll make lentil soup for us and give her a bowl after picking out the bits of ham. I'll boil them in chicken broth and give them to her just like that to get her used to the taste of chicken since I don't plan on giving it to her for a few more months. No this is great! The black bean soup and ricotta sound awesome.
I just made amazing but really simple lentil soup the other day. I didn't measure the spices so this is a rough estimate of what went into the soup. Fix the spices to taste if it comes out too bland or not interesting enough
You can add some baby spinach at the end or some kale at the beginning for some extra vitamins. I love mushrooms w/ lentils as they really add a great umami flavor.
2 finely chopped stalks of celery 1 cup diced baby carrots 1 package of cremini/ baby bella mushrooms 6 cloves of garlic, chopped 1/2 TBSP curry powder 1 tsp cumin sprinkle of paprika 1 bay leaf freshly ground pepper and salt to taste few tablespoons good quality olive oil 1 cup red lentils (or any kind of lentils) 4 cups water
Sautee the mushrooms in olive oil until they give some juice and start to cook, then add in the celery, carrots and garlic. Cook until wilted and then add in the spices, lentils and water. Bring to a boil. Simmer for 30-40 minutes until lentils are squishy and cooked (mine cooked fairly fast, I am guessing it's the pot I used? Not sure) Salt + Pepper to taste. Enjoy!
