I need ideas. Nothing sounds good to me for some reason. Does anyone have any favorite low fat or skinny girl recipes? H wants homemade chicken fingers with rice, but I made the chicken last time and ever since then they gross me out for some reason.
I made potato cauliflower soup. It was yummy. On deck for the rest of the week: chicken satay with white rice and salad, pancakes, chili, homemade pizza, mushroom frittata.
we're cooking white rice to go with. i''ve been looking for some recipes to jazz up the rice a little. something simple with some of the flavors in the rest of the meal (sesame, soy, mirin, miso, etc). any suggestions would be appreciated!

This sounds really good. Do you every try jasmine rice? I love it.
only w/ boneless, skinless breasts because that's all I had on hand.
I make this all the time, it's delicious. The green beans can get soggy if they are cooked for too long underneath everything. I usually just leave them on top.
I tried to eat a salad, but it was just blah, even though it shouldn't have been (dried cherries, feta, almonds, and a good balsamic dressing). So I had pb&j and an orange instead. H had the rest of the chicken curry from last night, and the girls had yogurt and about 2 bites of mac-n-cheese.
very fancy Sunday night dinner in the D&B house tonight.
but i would rather eat it WITH pasta, than instead of pasta. lol. although i do love roasted cauliflower with some garlic and some tomato sauce on top. yum.
