anything a baby her age with teeth would eat! They really don't use their teeth to eat at this age. That's why you don't give them really crunchy harder stuff until they're older and their molars are working. Fiona has 6 teeth and just sucks on her finger foods anyway.
It depends. How is the whole "mashing food with the gums" thing going? Because you can steam or roast veggies like carrots and sweet potato for her if she's mastered that.
She's still toothless, and I've noticed she still does pretty well just "chewing" with her gums. I've gotten a little more adventurous and have given her big chunks of fruit, toast with hummus, and some pasta. She's been good with all of that. Pita bread didn't go that well for us though. I'm still nervous giving her finger food without her having teeth, but she seems okay so far.

If your babe has a decent pincer grasp you can try cheese, bread, tortilla, pasta, lentils, couscous etc. Also I've started making more "interesting" purees, like kale/spinach/brown rice with spices, hummus with veggies added in. She has teeth, but DD1 didn't until almost 11 months and she did well eating all of this and more.
Hazel had zero teeth until she was 1. We would give her shredded meat, cheese, bananas, veggies, pasta, fruit and bread. So pretty much all food
Ditto this with my DS1. The front teeth they get in the beginning aren't for chewing anyway, those are the molars for that. So the gums work just as well. We fed him everything. DS2 has 4-6 teeth and eats most things, his teeth don't really help out anyway, except for biting my finger.

Almost everything. Probably the hardest things he has gummed are rice cakes along with shredded pork. But beans, ground meats, chicken breast is soft enough, sandwiches, toast eggs, pasta (he loves tortellini), hunks of cheddar, melon, ripe pear, steamed apple, steamed veggies.
N never loved purees. He only has 2 teeth and eats so many things, don't let lack of teeth deter you. I just cup it all up very small. We steam fruits and veggies so they are really soft, he eats tiny pieces of healthy meatballs, quartered blueberries, chunks of banana, cut up kiwi etc.... Adam too was on all real food at 10months.
