Ditto the ice water bath immediately after they are done boiling. Also, adding a little vinegar to the water helps make them easier to peel. If I am making egg salad or something where I am not just eating the egg I do this. It does give the egg a slight vinegar taste I think so I don't do it if I am just making them for breakfast.
Immediately after the eggs are boiled, put them in ice water or the fridge to cool for a while (or freezer if you're in a hurry). The sudden cold makes the membrane snap to the shell and it peels easily under running water. Always works for me.

Ditto the above: older eggs, ice bath. I always crack the eggs at one of the ends (not in the middle) and peel them under warm running water. I don't have any problems usually.

I done baked hard cooked eggs before. I found the outside of the egg to be a bit more rubbery (although the yolk was perfect). Also, the egg gets a brown spot where it meets the pan/rack you are cooking it on.

for everyone that asked about the oven eggs:
you need to bake them between 325 and 350, depending on your oven. mine works best at 325. i use a muffin tin - 1 egg per hole. bake for 25-30 minutes, then immediately remove and place in some ice water to stop them from continuing to cook. if your oven runs hotter, you may need to reduce the time.

I've gotten them before. I was a little nervous too, but they were totally fine. I wanted to make a big batch of egg salad and didn't want to peel all the eggs.
I got flamed for this years ago! Eggland's Best makes a perfectly fine pre-cooked/pre-peeled variety that I always buy when I make deviled eggs. For the 2 or 3 times a year I make them, I can justify paying an extra $2 to save myself from having to peel those bitches.
I tried the baking soda trick last night and it worked! I used a heaping tablespoon in a small pot of water for 3 eggs. Normally my peeled eggs look like moon rocks.
