Disclaimer: I am not a baker. I am forced to bake for food allergy purposes but I'm a sucky baker.
We are doing cupcakes for H's birthday on Wednesday for her to take to school. Can I make them Sunday and frost them late Tuesday night? Will they still be fresh? Counter or fridge? They will be vegan in terms of spoilage but I don't want to make little kids sick. Thanks!
I think if you make them that far in advance they will get crusty. I would make them Monday night, keep them in a sealed container on the counter and they should be fine before you frost them.
Eta: I'm not sure if them being vegan will effect them being made that early.
I'm not a great baker either (I pretty much suck at it), but I feel like while you could bake them in advance, they may not taste as good after being frozen/defrosted. Then again, I'm not familiar with vegan baked goods, so maybe it will be just fine and a whole hell of a lot easier.
Bake Sunday and freeze. Pull them out Tuesday and frost. I've frosted frozen cupcakes and didn't have any issues come up. Let them thaw the rest of the way in the fridge overnight.

This. Just make sure you wrap them up really well and they'll be fine. Frosting is what suffers in the freezer, imo, not the cake itself.
