Hey love, so I made the baby muffins, and they turned out pretty good! I think they're perfect for baby because they're bland enough, and easy to break into pieces. The recipe I had just didn't seem good for baby, so I just kind of made up my own. If you don't want to put any sugar in, you don't have to. I just put a small amount anyway.
Zucchini Carrot Apple muffins
2 cups whole wheat flour 1 tsp baking powder 1 tsp baking soda 1 tsp cinnamon 1/2 cup grated zucchini 1/2 cup pureed carrot 1/2 cup applesauce 1/3 cup olive oil 2 tbsp white sugar
Preheat the oven to 375 degrees. Sift together the flour, cinnamon, baking powder, and baking soda in a small bowl. In a large mixing bowl, combine sugar, zucchini, carrot, applesauce, and oil. Beat until combined. Slowly add dry ingredients in thirds, mixing to incorporate. Grease muffin pan and spoon batter into cups, 3/4 full. Bake 15-17 minutes until toothpick comes out clean. Makes 1 dozen.

Butting in... I have all of this but zucchini and the carrots need to be used stat. I wonder if I can make this without zucchini?? I'm such a baking dum-dum.

Dahli, I was hoping you'd see this too, because it's MSPI friendly too. You could even add more sugar and raisins to make it yummier for you to eat lol
Eav, it could be good without the zucchini, I'd just add a little more applesauce and carrots if you got it, so they stay moist. Say do 3/4 cup of each!
Awesome! I'm so bored and have been trying to figure out what to do with these carrots. I've been eating them but I bought A LOT. I eat applesauce with every meal so heaven knows I've got jars full here.
