I thought about it (that is, keeping up greenery), but I just decided to put everything away. One reason is we're having a party in a couple weeks and I might put our some Valentine's decor.

I have some vases filled with fake snow and snowflakes and a snow sign. The centerpiece on my table is a vase with Epsom salt with a candle with snow painted garland with "snow balls" and pine cones
I just decorated the kitchen - dining room for Valentines' Day with red candles in crystal candlesticks on the dining table, heart motif dishtowels and oven mitts, Heart wreath on the door and red hots in the candy dish. I try not to overdo it.
those sound like great items to keep out post Christmas before another good reason to change them out comes along. it always feels so bare post-Christmas, so even if after this you are just back to your everyday decor (i.e., you don't do valentines or spring/easter decor, etc.), moving from what you describe to everyday stuff is less shocking.
i gotta admit that i start to bring out some spring colors to brighten up my winter. my dining room centerpiece is super simple with a classic hurricane vase w/a coral, sage and lemon yellow candle with bean filler to stablize the candle--all placed on top of a spring placemat (can't really do runners these days b/c DS likes to pull them off the table and i don't want him playing magician to crash everything else to the ground!). i do have some good sized apothecary jars and have been debating filling them with more wintery fillers (sticks from the yard last year or pine cones) or putting faux fruit in them (have found some really good looking ones at homegoods recently).
