I've mentioned before that because we keep kosher, we have 2 sets of everything - one for meat and one for dairy. Before, H was the main chef in the house and most big and involved meals were made with our meat stuff and so we only had fancy knives for meat. We have a complete Wuhstof set, it's awesome. Since I started cooking more, though, I tend to use the dairy stuff bc I like adding cheese so I just go a big Henkels chef's knife for dairy cooking and whooooooo I loooooove it!
Want me to slice through this giant bunch of chard? Sure, whop whop whop, here ya go! That tomato? No problem - diced or in chunks?
Yup, I'm officially a grown up. I'm giddy over a knife.

I went a looooong time between knife sharpenings and Patsy had all my knives sharpened for my birthday. I was giddy as all get out when I realized what a sharp knife was like again.

I know taken out of context this would make me sound like a creeper, but I LOVE a good sharp knife. I grew up in a house where my mom would cut a watermelon with a steak knife. Once I got a real set of knives I realized that cooking can actually be easy. I had to inform my mom that you shouldn't break a sweat to chop celery.
