Does anyone have a great chili recipe? I made a martha stewart veggie chili and cornbread tonight and it was way too acidic (from the tomatoes) and unbalanced. Kinda mellow and bland for me, although hubby said it was just the right amt of spice for him.
I would be happy with a veggie or meat recipe, just want something yummy to make next time.

I'm posting a Cincinnati Chili recipe on my blog on Wednesday. It is spiced with cinnamon, cloves, cocoa and served over spaghetti. I really enjoyed it, has a Mediterranean twist.

I have 2 we tried this season and liked, maybe a little on the bland side but I also use no salt tomatoes and whatnot, if you didn't do that they'd probably be really good. I make veggie chili w/ chili magic, garlic, onions, black beans, kidney beans, diced tomatoes, and a bunch of veggies. Oh, and some red wine, some cumin, and a couple of bay leaves. You can tweak it. Also, jalapenos if you like spicy.
hmmm... i'm in CA and i've never seen that, is it just in the spices section?

It's with the canned beans. It's pinto beans in some kind of chili sauce. It is deliciouuuss. I can't make red chili from scratch that tastes as good. lol
I like chili and make many kinds. This one is an unusual one and it stands out to me as hubby still talks about "that amazing chili with the squash". It's kind of a bit more work than your regular ground beef + chili powder type chili, but if you have a bit of time its great!
ETA I don't think I used brisket for some reason.. I feel like I might have just used stew beef, I'm not sure. Brisket is very fatty I think, with that combined with the bacon it might be a bit much. But lean stew beef would be good probably.
I use Wick Fowler's 2 Alarm Chili mix that has the spices already measured out (but I leave out the flour and only use 1/2 of the salt), 1 lb. ground meat (beef, turkey, etc.), 1 can dark kidney beans, 1 can light kidney beans, 28 oz diced tomatoes, and 1 or 2 cans of rotel depending on how it looks.
Brown the meat (sometimes I add onion and green pepper while cooking the meat), drain fat. Mix all ingredients in crockpot and cook on low 6-8 hours or high 3-4 hours.
I serve chili with oyster crackers and cheese, or grilled cheese sandwiches.
I make turkey chili with the recipe on the McCormick packets. I double the beans and drain them and add extra tomato sauce. Then I top with sour cream and cheese. I love chili!

Here is my husband's chili recipe. I change up the types of beans/peppers a lot, use stew meat instead of ground beef, and don't measure anything now, but this is a good starting recipe.
Anchorleg Chili
Ingredients 2 lbs beef (lean ground or cut into small cubes) 1 can black beans 1 can pinto beans 1 can black eyed peas 1 can corn 24 roma tomatoes or 2 cans diced tomatoes or 12 and 1 6 bell peppers 6 jalapeno peppers 1 large yellow onion (optional) Spices: Salt, black pepper, granulated garlic, chili powder, chile powder, cayenne powder smoked paprika, oregano, savory, marjoram, dehydrated onion flakes (if no fresh onion is used)
Directions Place beef in large, heavy bottom pot. Cover with salt, black pepper, garlic powder, and onion flakes or diced onion. If using cubes, add a little olive oil Brown beef if using cubes, beef will begin to give off foamy juice. Reduce until this is gone and you are left with browned beef and a little oil If using ground beef, strain most, but not all, grease While beef is browning, chop tomatoes. When beef is browned, add tomatoes and chop peppers and onion. Once beef and tomatoes begins to boil, reduce to low heat, add peppers and onions. Season with everything except salt, cover to simmer Simmer for ~3 hours, checking seasoning every hour. If too thick, add beef broth or cheap American beer as needed. Add beans and corn Check seasoning Simmer for ~1 hour, checking seasoning every half hour. Simmer uncovered if needed to reduce. Cool for 20 minutes to thicken
Protip: Rice takes 20 minutes to cook. Cook it while chili thickens.
Server over a starch (rice, tortilla chips, bread, potatoes) with diary garnish (cheese or sour cream) and hot sauce on the side.
