I had a ton of kale that I didn't know what to do with and I was making a stir fry but not all of it fit in the pan (haha first world problems) so I decided to try to replicate the kale salad recipe from my favorite health food store. This is a local chain that is a whole-foods type store in SD that has an AMAZING deli. Their stuff is super healthy but also delish and I've been trying to replicate some of their recipes bc it is also super expensive (also like WF.) So the ingredients are:
kale 1/3-1/2 large onion, sliced thinly 1 lemon or lime 1 small orange tamari sauce (or soy, but the tamari flavor is really nice in this) sesame oil olive oil or if you want to get fancy, flax oil (the store uses flax oil but I only have olive)
Loose directions bc I didn't measure:
I used about 2/3 of a package of TJ's chopped up kale, which is basically 1 small bunch. I think this is dino kale but you can use any type. Wash and set aside in a big bowl. Cut up onion into thin slices and add to the bowl.
Dressing: Squeeze the lemon or lime and orange juices into a small bowl, add about a capful of the tamari (teaspoon or two), about a teaspoon of sesame oil and a tablespoon of the olive or flax oil - mix all this well and add into the kale - mix it around a bunch and let it sit in the fridge for a while to soak up the dressing (actually I didn't do this but the store always lets it sit overnight or longer and its mushier than mine was but really yummy when it soaks up all the flavors). add more tamari or sesame oil if you like a stronger flavor - I basically did it to taste. enjoy!
Oh and I forgot to mention that you can probably add other veggies here or use the dressing on other bitter greens. The combo of acid from the citrus + salt from the tamari really cuts the bitterness.

Awesome! Since I eyeballed everything, I am hoping I am right in my estimations on the dressing but you can always just add stuff if its unbalanced. I believe in this salad because my husband actually ate some!
I need to try eating Kale again. I love the stuff, but the last time I ate it L got terrrrrrriiibble gas. That was months ago though, so I should try again.

Maybe if you parboiled it or steamed it before putting it in a salad like this or just cook it a little bit more you won't get gas? Or did you get it from cooked kale?
