Okay it sounds like it's not moist enough. You could try adding some apple juice and another tablespoon or tablespoon and a half of olive oil. I'd say maybe 1/4 cup of apple juice. Flax meal doesn't dissolve the same way sugar does, so it might be making it too dry. Zucchini is supposed to be kind of gloppy though, so now worries about that. You use a finer grater if you want it to be smaller though. But moisture is good, you don't need to drain the zucchini!

In the baking world, sugar is considered a liquid, so you lost some there. Also, applesauce is broken down by being cooked and you wouldn't have gotten the same moisture level from your pureed apples as you would have gotten from apple sauce.

This. Sugar does more than just sweeten baked goods, chemically speaking. I would not eliminate it completely. If you want to eliminate processed sugar you can substitute honey. I have never tried agave nectar but it might work too.
