I need some suggestions! H and I have been on a clean out the pantry/freezer/fridge kick since we're on an E. student break and what I make doesn't matter as much.
We're getting empty now so I'm shopping tommorow.
All I got so far is grilled chicken salads and either shredded pork or beef.

Well, tonight for dinner R is going out with his department for a work thing. So ... I'm having a bowl of Wheaties. Tomorrow we'll be eating at his annual work banquet. Saturday we're going XC skiing so I'm presuming dinner will be from the lodge. Sunday we're taking the tree/decorations down, so we'll be having pizzas (made on TJs whole wheat naan)
I think we might have it with wilted spinach (or a nice big salad), and whatever grain (rice, quinoa....)that I find in the pantry.
We had home made vegetable pot pies last night, but we have mostly been eating soup, since DH would be happy to have it every day and it is easy. We've had black bean soup, a tomato based soup with hominy and whatever else I could throw in to make DH feel kind of like he was having meatless menudo, and a 'clean out the fridge' type vegetable soup with kale. We have also had shrimp and scallops somewhere in there, and mac and cheese....and a lot of salads.
i'm making a new recipe tonight - Lasagne Soup. Smells good, hopefully it is!
Also, I am trying out the Man Pleasin' Chicken that is all over pinterest tomorrow.
Some of our favorites that are always in rotation...
-chicken enchiladas -taco salad -wraps/burritos/quesadillas....I stuff tortillas with whatever is on hand...ground beef and lettuce and refried beans make burritos, shredded chicken and black beans and cheese make good quesadillas, etc -Pioneer Woman's Meatballs with peppers and pineapple is a fav -chicken pot pie -I make mine with a biscuity crust instead of pie crust -stir fry, again with whatever is in the house:) -I love a good feed of sauage, sausage gravy and biscuits -baked spaghetti -Slow cooker pepper steak -Beef barley stew
We bought the America's Test Kitchen magazine (it's a best of one) and it has some AWESOME recipes in it. So far we've had a quinoa vegetable stew and a pasta (it had goat cheese). Gabe has liked both.

We have stir fry, smothered steak, teriyaki chicken(crockpot meal), goulash, and hamburger soup on our menu. Now that Brandon is working I try to make meals before I go to work so we both get a good meal.
Pizza lasagna is good too. Just layer pizza ingredients like lasagna (e.g. sauce, noodle, pepperoni, cheese, sauce...) No ricotta cheese. Not healthy. But, toddler approved and tasty.
Lemon artichoke chicken with herbed linguine, green beans, and salad -- pan sear some chicken, saute onion and garlic, deglaze with white wine, add chicken back in plus a can of artichoke hearts and simmer for 10-15 min. Add lemon juice and zest and some chopped herbs.

Italian beef with roasted sweet potatoes and brussel sprouts
Roast chicken with potatoes and carrots
Chicken enchiladas with spanish rice and corn
Tequila lime chicken with spanish rice and corn
Ginger soy glazed chicken with brown rice and roasted broccoli
Another veggie/pasta meal I love is butternut squash ravioli from Costo or TJs w/ sage butter sauce along with steamed broccoli and sundried tomato bread (artisan bread in 5 mins. a day recipe).
Sandwiches with kale chips is another good/quick go-to.
