What is your best meal? The meal you are best known for, or your most impressive meal that you use when entertaining company you want to impress....
I don't know if I have one! I cook simple food...I don't really have anything "fancy" that I can whip up, aside from like a roast with garlic mashed potatoes and gravy.
But I think I am best known for my mexican food. We love mexican in this house, and I make a MEAN enchilada with cilantro lime rice..mmmmm.

I don't really do impress the company entertaining. I have been complemented before on keeping meals simple and convenient, but still actually cooking.
Probably best known for my spinach artichoke dip (which is actually Alton Brown's)
Used to be my enchiladas and meatloaf before we went gluten free. Miss those.
I am a pretty good cook, but I think the people that I cook for are easily impressed. My siblings think my food always looks pretty...I guess I am always decorating something. lol
DH is impressed with my ability to make a real, nice dinner in 20 minutes or so, when he couldn't find 'anything' to make after searching through the fridge, freezer and pantry. I've become known as the MacGyver of the family in the kitchen....I can throw together whatever we have or whatever the allergic and food sensitive people in the family can have and can replicate sauces and stuff and make everyone happy.
My mom thinks that I cook 'fancier' foods than she does, but I think we eat a lot of simple meals with very simple flavor profiles too. I just really enjoy cooking and trying new foods, and my Mom spent over 50 years cooking for my dad, who liked very basic food and did not experiment at all. She likes to eat what I make, but she just doesn't enjoy cooking and doesn't feel like cooking new things for herself.
When I still ate chicken, I used to make a phyllo wrapped chicken breast with artichoke hearts, cheese and chutney, that always got raves. Phyllo always impresses people...I make a mean spanikopita, but I got the recipe from a Greek lady who was an amazing cook, so it is hard to go wrong.
I think my pecan crusted salmon has a good reputation, and I can cook scallops perfectly, although DH has got me beat if they are breaded and deep fried. His breaded zucchini and deep fried artichoke hearts are amazing too.
I don't think I could pick just one overall. It's easier for me to pick favorites out of a category. My husband says my spaghetti is his favorite although I start with a jar of Prego and add to it so it's not like I even make it from scratch! One of my favorite meals is a pasta dish with chicken, mushrooms, asparagus and a pesto sauce. Another favorite is a salad I make with romaine lettuce, strawberries, feta cheese, pine nuts, a red wine vinegar dressing, etc. Our favorite fish dish has a balsamic tomato topping that is so easy to make it amazes me how good it is.
My husband is fantastic at grilling things like ribs and brisket.... things that literally take hours on the grill. Yum.
I can roast any kind of meat and one of the best roasts I do is a Beef Wellington. I also make crazy good swedish meatballs. My best appetizer is puffed pastry with a seafood filling. Dessert: Chocolate Cake. I have a recipe that is fool proof, ridiculously easy and better than any store bought box. I'm also "known" for my cake decorating skills. A hobby. Other: I make a paprika/bacon/cream sauce that is ridiculous. Works especially well with shrimp or chicken...and I have stewed chicken in it...you could probably dip garlic bread in it...now my mouth is watering.
For a casual weeknight with friends, this Mexican chicken chili is SO GOOD. It's one of my favorite meals. I serve with cornbread, not rice like she suggests. It's a great freezer meal, too. Make it and freeze it in individual containers for your own Lean Cuisines. (I've frozen it as long as 5 months and it's come out fine!) www.skinnytaste.com/2008/11/crock-pot-chicken-taco-chili-4-pts.html Nice dinner with friends
I think generally the best dishes we make are chicken curry and vegetable stir fry. I make a good baked macaroni and cheese, but that generally only gets served to people outside the family at our summer block party or once in a while at work carry-in lunches.
dh likes it any time i cook and he doesn't have to....only when we are busy, really, and don't have the time to be cooking (either of us).
my roomies always liked my white chicken lasagne with fresh salad and wine. it has been a while since i have made it....i will have to do it again sometime.
My lasagna rocks! I get complimented on that the most. Along with my 2 egg bake recipes. Weekend guests get mad if I make something else...lol. I make good shredded beef and pork too.
My soups also get rave reviews even though I half a$$ recipes as I go along.
All are guest worthy IMO. I lead a simple life with simple friends as well.
I'm pretty mean with a grill too but again, nothing extravagent.
