I am baking some sugar cookies this week for a birthday party on Saturday.
How is this schedule: Mon- Make sugar cookies; refrigerate dough overnight Tues- Bake cookies Fri- Make royal icing, outline and flood cookies Saturday- Package cookies into cellophane bags
How can I store the baked cookies from Tuesday night through Fri?

You could store them at room temperature in an airtight container, and they'd be just fine. If you were making them 2+ weeks ahead of time, I'd say freeze them.
