I would try a batch of muffins with varying amounts and combinations. I wouldn't experiment with it on the actual day. Ditto gel color being superior, especially where red is involved.

My memories of Easter egg dying say that red+blue food coloring rarely gives a satisfying purple color. In theory it should, but the reality is normally disappointing. And that's starting with a white base. Cornbread is yellow, which is the inverse of purple, which means you're even more likely to get brown.
There are purple varieties of corn, so it might be possible to start with purple corn meal. If you could source it.
