Hey ladies - I like to make tofu dishes when DH isnt going to be home for dinner, but Ive never gone beyond stir fry. Does anyone have any other recipes or suggestions they can send my way? Thanks!
Press the tofu. Put a block of tofu into a pie plate. Put a second pie plate on top. Weigh down with three or four cans of beans (or any other canned good) for 24 hours in the fridge. Drain off the liquid. This pressed tofu behaves similarly to chicken breast and like chicken breast needs a marinade to amp up the flavor. I will cut the tofu into cubes or triangles. I marinade the triangles in barbecue sauce, Italian dressing, or a mix of soy, scallions and ginger and then roast on a cookie sheet for 20 to 30 minutes until cooked through. Tofu will absorb flavors, so I will let it sit in the marinade for an hour minimum so that the flavor sinks into the tofu.
If you want tofu as tofu, you can weight it/drain it, and bread it with panko and seasonings and bake. Kinda like chicken fingers. You can have fun with dips. My favorite is a spicy peanut sauce. Which goes well with summer rolls, something else that can use tofu.
