Lemon linguine with spring salad Barbecued tofu with grilled corn and zucchini Hot-sweet salmon with orange braised fennel and tomato salad Shrimp in escabeche and cappellini pomordoro Vegetarian chili with jalapeño cornbread Miso glazed eggplant with sesame rice and cucumber salad and a night of leftovers.
Tonight is the employee appreciation party for my work, it's at a tiki bar kind of place. Buffet of some sort and open bar.
Tomorrow....we have eggs we need to use, so I'm thinking of a baked potato frittata. We'll have fruit as well.
Then for the week I'm thinking:
-Ratatouille-Style Garden Vegetable Sauce and Fusilli and salad -Burritos with cafe rio chicken, chips and salsa, black beans and corn -Panko and parm crusted chicken with some kind of veggie

that's as far as I got but that's pretty good for us!
