What's been the favorite thing you've eaten this week/weekend?
Despite the fact that I don't want to go on a diet for my RE (because I don't want to screw up my kidneys) I have been trying to eat a little healthier and cutting out my super-full-of-fat-foods. Which really just challenged me to try to create new tasty dishes again. So, I honestly can't choose.
Option 1 for favorite is: tonight's Mexican fajita style food (grilled slices of beef, grilled strips of bell peppers, a sour cream/yoghurt dip with cilantro and hot sauce and lime mixed in (I think sour cream is too fatty, but can't stand the taste of yoghurt, so I mix and it's yumm) and heaps and heaps of this awesome home-made salsa. It was really the salsa that made the dish. So super yummy!
Option 2 for favorite is: yesterday's broccoli and blue cheese soup. It was sauteed onions, celery, leeks and potato, chicken broth, and a whole head of broccoli including the hard parts (which just go in sooner than the flower-parts), immersion blend it, then crumble blue cheese over it, let a little melt through, then crumble some more when you serve, so those pieces stay chunky. So so so tasty.
My weekend hasn't been the picture of healthy eating.
MH made bacon chocolate chip pancakes for breakfast yesterday morning and we went to our favorite Mexican restaurant last night. I had chipotle grilled chicken, some Mexican Buffalo Wings in this chili-chipotle sauce, and split a dulche de leche torte with MH for dessert.
Dinners for the week are far more wholesome - buffalo chicken with brown rice and broccoli; pappa al pomodoro, black bean and quinoa chili and pork chops with parsnips.
Whoa, both of those options sound so good. I think I'd be wanting fajitas, though.
My favorite thing I ate this weekend was a blood orange. I've eaten things that tasted better, but that orange was so good and I felt zero guilt after I ate it. So that was like a double bonus!
Those both sound amazing. We ordered pizza on Friday and it was super yummy! I also made ribs today that were really good. This week, I am focusing on healthy food!
Last night we did go to a local sandwich/salad place that I love. They have fresh whole roasted turkey, tri-tip, etc. I get a turkey club sandwhich with onion strings and a fantastic honey mustard. They also have fresh baked cookies, and I get a chocolate crinkle cookie that tastes like half-baked brownies.
I also made some pretty good sushi tonight, but the amount of work it takes counts against that a little, LOL.
I tried veggie pizza this weekend. It was delicious it was just onion and green pepper. I told H I was going to try to eat healthier (more fruits, and veggies, less red meat) because it is suppose to be better for fertility.
My favorite from the weekend is a toss up between the spanish rice I made or the brisket DH made (especially the bark of it, it turned out soo good this time). My rice turned out with a really nice texture to and I had a hard time stopping at just one serving.
