My winter CSA included golden beets. I have never used golden beets and rarely eaten regular beets. Do I have to do something different with golden beets as opposed to regular red beets? Any recipe suggestions?
I'd just roast them like regular beets - cover in olive oil, wrap in tin foil then throw in a 375ish oven for 45 minutes - then put them in a salad or something.

I second the suggestion of roasting them. I love roast beets and I've found the yellow to me a little more mellow than regular. They actually work really well together.
