I have about 3 cups of chopped chicken. I've already made chic enchiladas and chicken salad. My family isn't very fond of creamy casseroles (like poppy seed chic- that was a huge bust! or recipes using "cream of whatever" soups. Any favs? Thanks so much!!
Last night, I made a shepherd's pie with leftover roast chicken. I sauteed some fresh chopped mushrooms and garlic in butter (onion would've been nice, too, but I was lazy), added some leftover gravy and some more chicken broth, and then I added the leftover vegetables and chicken from our original meal, and hit it with some salt and pepper.
I let it all get warmed up, poured it into a pie plate, and topped it with the leftover mashed potatoes and sprinkled on some grated Cheddar. 350 degrees for maybe 15 minutes until it was bubbly, and a couple minutes under the broiler to brown up the cheese a bit.
Just be careful with how much gravy/broth you add ... mine turned out a bit soupy. Still tasted good, but didn't stay together too well when I dished it out onto plates.
I used the rest of the chicken for enchiladas, chicken salad sandwiches, and I'll make broth with the carcass.
