Hi everyone! So, I've been lurking around these boards for probably about a year, and I just recently decided to make the move and create an account on here. I'm recently married, working full time and working on my MBA. I try to cook on nights when I don't have school, and on the weekends I LOVE to try cooking/baking new things.
My husband loves to eat, and he thinks that every meal should have meat in it . I cook a lot of chicken, and since he killed a dear a few months ago, I cook deer (ground meat, steaks, or stew meat) probably 2 or 3 times a week. DH doesn't really like many vegetables (other than CORN - which really doesn't count), and foods with tomatoes or a lot of richness (creaminess?) upset his stomach.
Do you have any suggestions on things I could cook that don't have tomatoes or a lot of creaminess (so that he can enjoy the food and not get sick afterwards)? And...any of you have good ways to cook vegetables that a man would otherwise consider gross?
As far as the veggies thing goes, my best advice is to roast them. Whatever you're making (broccoli, asparagus, carrots, brussels sprouts, squash...) just toss it with some olive oil and salt then throw in a hot (450 degree) oven for five to ten minutes.

How do you usually cook vegetables? My husband claimed to hate vegetables when we first met, but it was because growing up his father boiled all their veggies past the point of recognition. Frankly, I don't think anyone enjoys overcooked, flavorless veggies!
As soon as he started trying vegetables I made - steamed, sauteed, grilled, roasted, he decided he actually liked vegetables and now requests things like zucchini!
It's also pretty easy to incorporate vegetables into other dishes - we do a lot of pasta dishes with lots of veggies added in (last week I made spaghetti with zucchini, this week we're having penne with kale and parsnips - neither of which have tomatoes or tomato sauce), stirfries loaded with vegetables, and soups (I made a potato and corn chowder yesterday, which might be a little too creamy, but you could always use chicken/vegetable broth instead of milk, and it already has corn in it which could be a head start!)

haha I bet he would like potato and corn chowder! His issue with vegetables(I think) is that he doesn't like to "crunch" on his food. And I don't really think he's had much exposure to "well-cooked" veggies either. So I guess I just need to buy some next time I go to the store and experiment. What do you put in your penne with kale and parsnips (like do you make a sauce or it's just pasta with vegetables)?? And thanks for your input!
And honestly, I recommend this blog implicitly. Joanne is a vegetarian (her boyfriend is not) and the things she does with vegetables is astounding. You could have your DH look through and pick out some things that look good to him.
My DH loves her masa crepes with chard, chile, and cilantro, which is so far off from what he grew up eating and definitely nothing he would have picked for himself years ago.
