We went to a restaurant a while back that specializes in bruschetta. They had about 20 different kinds on the menu. Sorry if this is common, it was the first one I'd been to. Anyway, I had some that were really good, so I decided to try a couple at home tonight, it was so good and pretty easy. Thought I'd share Sliced into small slices, they'd be great for gatherings.
I took a thick baguette (one that I made earlier, but store bought would be fine), and sliced it into 4-inch sections. Then I sliced each of those down the center, like if I was going to make a sandwich with it. I put them face up on a broiler tray and brushed them all with olive oil. I put sundried tomatoes (Costco) on half of them and left the others blank. I broiled them for about 5 mins. until they were darkening and crisped at the edges. On the tomato pieces, I put chopped fresh basil. On the others, I put brie slices and very thin Pink Lady apples slices (better with a really sweet apple). So good! Would have been even better al fresco in the spring.
So many combos to try. I'm a veggie, but there were some meat combos on the menu too: roasted peppers and cheese, honey and gorgonzola, beans and tomatoes, prosciutto figs and mascarpone, artichoke and sundried tomatoes, salami with feta and pesto. Easy to get creative too!
I served it with steamed-with-garlic-and-butter artichokes we got in our CSA this week. OMG so good.
