I cut up potatoes to make fries tonight but didn't get a chance to make them. They are still sitting on the counter and will be overnight. Can I rinse them and make cook them in the morning?

For future reference, you can definitely leave cut potatoes soaking in cold water overnight. I would not leave them out at room temp, though.
