I'm trying to come up with a game plan for meals this week and they need to be doubable (sp?) so I can cook half for E and I and take the other half to our friends who just had their baby Friday. They have a very picky 4 year old too so they have to be kid friendly.
So far I have: Monday- String Pie( its like a spaghetti bake), garlic bread and green beans.
Wednesday- Lemon, Garlic, Rosemary Chicken; rosemary roasted potatoes, and broccoli
Friday- No idea
Do you think these will work well? Ideas for Friday? Anything else I should take over too.
Breakfast foods like quiche or mini quiches, muffins, homemade frozen pancakes that they can warm up in the microwave, fresh fruit, and snacks. Maybe enchiladas or a tex mex meal?
Some things I really appreciated when we had J were lasagna, tortellini soup, spaghetti, baked ziti, etc. I second the idea of fresh fruits and snacks. After being in the hospital and uncomfortable for 9 months, nothing tasted better than fresh fruit! My mil got us bread and sandwich meats so we could have that for lunch or dinner. I would also suggest making large quantities of meals so they can freeze some of it to make it last. I know that the first week I was home we had so much food that whatever couldn't be frozen was almost wasted.

I made shepherds pie for a friend who had a baby last week. I also usually do lasagna, chicken pot pie, a big salad with chicken in a separate container so it doesn't wilt the greens.

Well they came home today so I had to rush! I have String Pie in the oven, salad, bread and fresh strawberries. I'll have to figure out something for Tuesday now and then I remembered they are going out of town on Thursday morning so I won't do anything for the end of the week.
