So next weekend, 03/10...we always go to a parade that starts at 2 pm. This year we're meeting at a friends house for brunch and I was looking for something interesting to bring.
I don't eat eggs so please don't suggest quiches or anything.
My idea is to cube potatos and oven brown them with corn beef and cabbaged diced the same size as the potatos? But before i wing that, do you have any awesome ideas
Colcannon is good too. (Speaking of, if anyone has a stellar colcannon recipe, please post!!)

Mine's really simple. This makes enough for about 3/4 people, so adjust accordingly. It uses bacon, but you could easily sub in corned beef if you wanted, you just won't be cooking the cabbage in bacon fat:
2 slices of bacon
1 small head of cabbage, cored and finely chopped
3 large yukon gold potatoes, peeled and diced
4 Tbsp butter
1/2 cup milk
salt and pepper
In a large saucepan, cook bacon slices. Remove bacon from pan, but leave drippings.
Cook the cabbage in the bacon fat for about 5 minutes. Add 1/4 cup of water to the pan, cover and cook for another 5 minutes. Remove cabbage from pan.
Place potatoes in the pan and cover with water. Bring to a boil and boil potatoes for 20 minutes.
Drain potatoes and return them to the pan. Roughly mash with a fork.
Chop bacon and add to the potatoes with the cabbage, butter, and milk.
Mash the potatoes until the desired consistency is reached. Season with salt and pepper to taste.
We used to have a restaurant near us that served wonderful colcannon but they dropped it from the menu.I'm going to try Dearprudence's recipe and Magdala's cake recipe this weekend. YUM!!!
How do you'all do corned beef and cabbage? My mom always made it, corned beef, cabbage, potatoes but I never watched her make and never learned her recipe. i want to make that this weekend too.

I usually make mine in the pressure cooker using this recipe (it's fantastic, I don't change a thing about it).
This year since we're celebrating on Monday I'm going to try a slow cooker method so we can come home to dinner being ready.
