My H is out of town Tuesday night through Sat morning, so I'm not making anything too involved for just myself the nights he is gone. So this is a pretty basic menu this week.
Yesterday - out Monday - chickpea and spinach stew I didn't make last week Tuesday - enchiladas with spinach, mushrooms, jack cheese and suiza sauce Wednesday - Pierogies with green salad Thursday - black bean soup with toppings and baked tortilla chips Friday - muenster, avocado and tomato hoagies with oven fries Saturday - quesadillas with mexican rice and tortilla chips

I was late with planning this week. Monday was a holiday for DH and it's the 10th straight day with temps over 30 and no rain or relief in sight. I haven't wanted to think about cooking, but I really wanted to do a stew to go with the soda bread for St. Patrick's Day. And the good news is the forecast is getting cooler, and by the end of the week the highs are supposed around 17.
Tuesday: Chicken & Cheese Quesadillas and carrot sticks with ranch dip
Wednesday: Vegetarian Spring Rolls and Fried Rice
Thursday: Easy Mexican Skillet and Corn & Peppers
Friday: Pancakes with fruit and Jell-O
Saturday: Cheese & Potato Croquettes and Marinated Vegetable Salad
Sunday: Carbonnade a la Flamande, Apple, Guinness & Cheddar Soda Bread, and Peppermint Ice Cream Sundaes
