Unfortunately, I never did find a really good substitute. When I avoided dairy, I just avoided instead of replacing it with something else. Also, I agree with carrotsmakemefat - if you haven't already, do some research on what to look out for with hidden dairy ingredients on labels. Luckily, milk is one they have to include on the "Contains:" portion of the label, but you can never be too careful when you're avoiding a flair up.

For mac n cheese, I use Quinoa pasta with daiya cheese. I also use soy milk and vegan "butter". It comes out pretty well for being gluten free and vegan. My super picky brother even liked it when I brought it to Thanksgiving last year. You are going to have to start reading labels. The orange vitamin water has lactose and other dairy in it. Most frozen products (not fresh frozen) has milk in it. I found that out the hard way in HS.

Not always. Especially with Casien/Casienate, which I am surprised about since it is the milk protein. And some items with lactose don't label it as containing milk. I know they are making that happen in Canada, but they need to make it happen in the US as well. There are many things I found out that I can't eat and it isn't label in the "Contains" section.
