1. How long should I wait between coats (primer and top coats)? I have to do one side at a time.
2. If I want there to be minimal brush strokes, should I use a specific type of paint? Should I put something in the paint to make it show less strokes?
How long it takes between coats depends on what kind of primer and paint you use. My suggestion is to use spray paint for the primer and a high quality brush on cabinet paint like Benjamin Moore's Satin Impervo. (Also, I recommend a satin finish for the cabinets as semi-gloss is too glossy for cabinets).
Spray paint dries within a few minutes, so if you're spraying a few cabinets, by the time you're done the 2nd or 3rd cabinet, the 1st is ready to be re-sprayed.
A brush on paint, like Impervo probably only needs about an hour to dry, although it's been a few years since I painted it on.
Just don't use regular old latex paint. I recommend BIN primer for the spray paint (or brush on if you really want to). You can get that at Lowes or HD. The finish paint I would buy at a paint store like BM or SW.

Follow the directions on the can as far as how long to wait between coats. It'll usually say something like "Dries to touch in 30 minutes, dry for recoat in 2-3 hours, dry for use in 24 hours" or whatever the lingo is.
As far as eliminating brush strokes, you can add Floetrol or whatever the newest paint conditioner is (ask your paint store guy.) I highly recommend an enamel-style paint for durability.
