Hey all,
Anyone still cooking for Mother's Day? My mom and I are making a team effort-- she wants to cook for her mom, too. Here is what we are planning:
Mushrooms stuffed with spinach dip BLT biscuit bites Fried chicken (just shallow fried in an electric skillet with flour, salt, pepper, and paprika--family tradition) Green beans w/ garlic and almonds Pea Salad Cheesey potatoes Banana cake w/ chocolate cream cheese frosting
I hope everything turns out (a few of the recipes are new). Have a good day and don't work too hard, especially if you're a mother!

I'm introducing my in-laws to barbeque pulled pork. My FIL is a bit concerned about the idea of barbeque when I don't have a barbeque pit. But I'm making pulled pork for sandwiches in the crock-pot, with a Coca-Cola barbeque sauce (only because root beer is $4 a can here and I need 4 cans!). I'm making a corn pudding and cole-slaw to go with the pork. My MIL (a former cake baker) is handling dessert, which is all right with me, because I always feel my desserts are inadequate next to her professional cakes.
My mom recently bought a cookbook (Lydia's Italy in America) and asked me to look through it find something to cook together. From the cookbook we are going to make: steak w/pizzaiola sauce basic marinara
Mushrooms stuffed with spinach dip BLT biscuit bites Fried chicken (just shallow fried in an electric skillet with flour, salt, pepper, and paprika--family tradition) Green beans w/ garlic and almonds Pea Salad Cheesey potatoes Banana cake w/ chocolate cream cheese frosting
I said I would do dessert- that's what I enjoy doing so I don't mind, but for the first year ever I'm not cooking dinner. I told my brothers and sisters they had to handle it so I could enjoy my own mothers day. I made peanut butter chocolate chip pound cake and Dorie's French lemon tart. I'm excited for both!
We're being pretty low key here. I'm making a "mexican lasagna" because it sounds good. Then I'm making blueberry muffins and chicken pasta salad for next week.

There's a huge PGA (golf) tournament here in town this weekend, and DH's parents and my dad are huge golf fans. My mom and I are not, but it's still a fun weekend.
Thankfully, my in laws live walking distance to the course, so we'll eat at their house while all the crowds clear out. My MIL is an amazing cook, and she insisted that I not do a thing since it is Mothers' Day (even though I pointed out that she's a mother too!). We usually cook out steaks on the Sunday of the tournament, but this year we're having spaghetti with homemade meatballs :-). And I'm sure many amazing desserts -- because that's how my MIL rolls :-)
Super simple from allrecipes-- allrecipes.com/recipe/bacon-and-tomato-cups/ I did use the refrigerated dough in order to save time since we were making so much, but I'm sure it could easily be altered to be from scratch.
