I spray painted the shiny brass knobs for my kitchen cabinets hammered silver 3 years ago.
The paint is starting to wear off on the knobs for the cabinets we use most so I will be respraying a few knobs this summer.
I cleaned them well using a degreaser (since they were in the kitchen), let them dry, scuffed them lightly with a rough sanding block and cleaned them again with soap and water and then let them dry for a day. Sprayed them with 3 light coats, letting it dry for at least 24 hours in between and then waited 48 hours before installing them on the cabinets. I used Rustoleum spray paint.

I think you could do it, but you might be surprised how cheaply you could just replace them. I bought new hardware for our kitchen and we had a LOT of cabinets. I bought a pretty nice brand and did the oil-rubbed bronze which tends to be more expensive, and it was all less than $500. I could have done it for less than that if I had spent more time sourcing them and looking for deals.
There's spray paint made for that purpose that I've seen used on doorknobs, but also look into just replacing them- I know Home Depot sells 10-packs of hardware (both knobs and handles) in pretty much every finish for $20-25.
