He just seems much more formal than everyone else. The first time he met me he called me "Mrs. LName" and I told him to please call me Veronica. I thought he might say the same since I called him Dr. Jones but he did not.

Is he a college professor? If not, strange. I have only dealt with PhDs who insisted on the Dr in academic settings.
I do giggle when people call me Dr. E-ring though. I have been known to throw the Dr. if someone is being an ass about their status or calls me Ms or Mrs with a hint of snark. Neither of which I think you are doing in this situation.
On a side note, dh has one of our vendors labeled in his phone as FirstName Douche LastName. It's funny when he tells Siri to call FirstName and she repeats "Calling FirstName Douche LastName mobile."
We laugh a ton. I hope he never accidentally does it in front of the guy.
