We got a ton of yellow squash, small head of broccoli, small head of cauliflower, a bunch of beets, a bunch of peaches, a pint of frozen blackberries, one cucumber, and two kinds of lettuce. Some friends also gave us a bunch of swiss chard out of their garden, and we still have English peas and green beans leftover from last week's CSA! Ahhh!
I think I'll stuff the yellow squash with a sausage and chard mixture (maybe with peas in it, too?). We'll roast or grill the broccoli, cauliflower, green beans, and possibly beets. BF and I eat roasted broccoli like popcorn, so that won't last long, and the other roasted veggies will probably be sides for something grilled.
We also have a ton of eggs from the CSA, so I'll be making an angel food cake with a citrus curd filling, and I'll probably use the blackberries to top that (or make a sauce with them to go over grilled peaches and vanilla ice cream--yum!).
I'll be picking up cauliflower, fennel bulb, lettuce mix, red potatoes and red romaine. Kind of boring on the veggie front this week. I was hoping for more scapes or asparagus.
I'm going to make a fennel and apple chopped salad and I'll probably roast the cauliflower.
We are getting sweet cherries and jar of applesauce from our fruit share.
