I just do lots of afghans. If you don't have a specific person in mind you can donate then to Project Linus or, as Sue Sue said, some local hospitals will take them as well.

I'll second Sue Sue.
There are TONS of charities that take hand knitted items. There's Project Linus for one. I know also there are quite a few charities that take hats, scarves, and mittens for the homeless. Some other charities take knitted or crocheted squares which they turn into blankets or whatever.
Just make sure that you follow the instructions that the charity gives because a lot have restrictions on certain colors and fibers. Google charity knitting (or crocheting) and a ton of stuff comes up.
