My ds's p.t.o.is putting on a luncheon for the teachers and staff tomorrow and I volunteered for dessert. I want to make something really good but not too difficult to make. Any summery ideas?
I like taking the tubes of cookie dough and cutting up rolos and gently pushing them into the dough, so you end up with double chocolate caramel cookies.

I had to make something the other weekend, but had very little time to do it. I ended up making a box mix ( gluten free actually, very dense) chocolate sheet cake in a 9x13 pan, then topped with fresh whipped cream and berries. I did blueberries and raspberries. very easy, and tasty!
Please make it easily portable! A lot of time when people bring in food for teachers, it is hard to get to during lunch breaks and might need to be eaten at a later time.
I made a tres leches cake last night that was awwwesome, and pretty easy. I like the brownies idea, or ohh, blondies. Yum.

Like jssymom14 said, though, this might not be the best recipe if the dessert will be sitting out a while. My go-to brownie recipe is Hershey's Best Brownies. If you use the Special Dark cocoa, they come out really rich and chocolatey - these get demolished whenever I bring them anywhere.
