I'm going to Vegas in a month(yay!) and I need to get info on the menus at some restaurants. I have Celiac disease and can't have gluten. Do you think I should contact each restaurant manger individually or do you think an email to the concierges at the different hotels would suffice? I already know of a casual-ish place in the Paris hotel with a g-free menu, Mesa Grill is supposed to very accommodating, and Joe's Seafood in Caesar's has a g-free menu too. I'm hoping to find at least one upscale place and then some other more casual places to dine at. Thanks.
Definitely contact the concierge at your hotel and let them know of your requirements. Any fine dining restaurant should have NO issues accomodating a gluten free request.
I would opt to eat at the buffets. Some especially have epic food displays, this way you get to pick your own food and eat as much of it as you want. My favourite one so far is the Wynn's, although I'm looking forward to trying Wicked Spoon at the Cosmo on our next trip. (which is happening in 3 days!)

While the buffets in Vegas can be epic you run the risk of cross contamination because people don't always use the right serving utensils
If you like seafood and don't mind spending some $$ on sunday brunch you should definitely hit up the Sterling Brunch at Bally's.

One of the best ways for me to find gluten free options has been to Tweet Chefs from fine dining places that I want to eat at. Most will respond publicly within 24 hours or DM me about it. Almost any fine dining place should be able to accomodate you without issue. Many will just want the information with the reservation to plan accordingly for your visit. Italian places can be tricky though since they deal with so much flour to make pasta.
Margaritaville has always been a go to casual place for us when we travel because they are very accomodating. They have a separate gluten free menu, but if you forget to ask the regular menu also has the gluten free options marked. They have great nachos that can feed several people for a snack or even a couple for a meal and a gluten free margarita that's great too. You can ccontact them in advance, but they are great if you just show up. The servers will always send a manager or chef if they can't answer questions. They also have a huge chocolate dessert that's gluten free.
You should have no problem. I have several friends with celiacs and my sister has a gluten intolerance and we've never had problems ordering for her. I know Wolfgang Puck's restaurants have many gluten free options.
