Nope. You need to order them separately and then tell the guys where you want them. HAVE THEM DO IT. It is a PITA to do yourself and they have little jigs that make it 10000x easier.
I guess I mean if you buy them, will they be on when they are installed. Supposedly there was a basic knob that came with this style. SUPPOSEDLY. But this was a new style, and the woman was like "with this style, you don't even need any if you don't want!" and I was like "no,I want." I really don't want to deal with the stupid cabinet lady again. ugh.
You are going to have to ask her. Sorry. It will all be over soon. And you probably want to find the knobs you really like so you can have then installed without having to worry about filling in/redoing holes if the stuff you like doesn't fit what is already there and/or being limited to what will fit the holes that are there from the previous knobs.

I would expect them to finish installing all of the cabinets, and then install the knobs at the end. Even a "default" knob wouldn't come already attached to the cabinet; it would have to be installed separately. So it makes the most sense to do that after all the cabinets are in place.
None of the cabinets in my house had knobs or drawer pulls when I bought the place, and it annoyed the hell out of me.
