Last Minute Trips/Booking packages

We'd like to plan a weeklong trip (from Chicago) in October with another couple. Ideally, we'd like to go out of continental US on the flight/transportation/accommodations budget of ~$1,000 per person.

We've scoped out Travelzoo and gate1travel for deals as well as groupon travel. Do you have any cites you recommend for looking at packaged deals? Or any trips that you think could be easily planned? (For example, we did a 4-city Europe trip earlier in the year and they did Greece last year. Both were really well planned out/organized trips. For this trip we're a bit more open (although we'd want accommodation and any needed transportation reservations ahead of time)). To get a "bargain" package, what's the ideal time to look/buy?

Hmmm so just air, accommodation? Not food and activities in that? What about Portugal or Spain? Or something like costa rica?

I don't know if there is a right time, I just keep an eye on prices for my destination and also look for sales on travel websites.

There's a pretty cool site called skyauction.com where you bid on travel packages. They are all different but sometimes you can get lucky and end up with an awesome deal.
