How do you cook beets?

We just got our first CSA of the season. In the mix, it had red beets and yellow beets (At least I think these are also beets). I have never cooked beets...How do you cook beets?

I like to roast them, basically following this method of wrapping them in foil:

I've also peeled them with a vegetable peeler ahead of cooking and then tossed them in olive oil before roasting.

You could also boil them. I'm considering pickling some beets in the next day or 2, and I'll probably follow this method:

Finally, don't forget you can eat the beet greens too, if they look like they're in good shape! Chop them and treat them like spinach or any other leafy green. I talk about cooking them near the bottom of this blog post:

I usually boil them and then either just eat them, or slice and roast. (I adore roasted beets with roasted medallions of goat cheese served on a nice bed of greens)

However, I've shredded them before and sauteed them with a little butter and that's my family's favorite preparation. They loved that.
