We just got our first CSA of the season. In the mix, it had red beets and yellow beets (At least I think these are also beets). I have never cooked beets...How do you cook beets?
Finally, don't forget you can eat the beet greens too, if they look like they're in good shape! Chop them and treat them like spinach or any other leafy green. I talk about cooking them near the bottom of this blog post:

I usually boil them and then either just eat them, or slice and roast. (I adore roasted beets with roasted medallions of goat cheese served on a nice bed of greens)
However, I've shredded them before and sauteed them with a little butter and that's my family's favorite preparation. They loved that.
